Ciavarella Cristiano

Apple Fritters are a delicious and easy dessert typical of Italian cuisine, especially that of South Tyrol, which is mainly prepared for Carnival!

650 g apples
400 g flour 00
150 g milk
120 g granulated sugar
100 g raisins
2 eggs
baking powder
powdered sugar
fry oil

To prepare the apple fritters, soak the raisins in warm water. Meanwhile, work the flour and a sachet of yeast, all sifted together, a pinch of salt, the peel of a lemon (only the yellow part) carefully washed and grated, the juice of half an orange, filtered, 2 tablespoons of rum, the eggs and finally the milk, pouring it slowly a little at a time: you will need to obtain a homogeneous and semi-dense batter

then stir in the raisins, well shaved, dried, and the apples, peeled, cored and cut into chunks.

Take the dough in small spoonfuls and fry it in plenty of oil heated to 170 °; remove the pancakes when they are golden brown, drain them on absorbent kitchen paper, sprinkle them with icing sugar and serve immediately hot.

Served hot.
