In a bowl, put the sifted flours and baking powder together with the sugar. In a second container, beat the egg yolks (keeping the egg whites)
together with yogurt and milk, until a homogeneous mixture is obtained. Pour everything over the powders and mix to mix. Add grated lemon zest to taste and a pinch of salt. Beat the egg whites until stiff and gently incorporate them into the batter several times.
Place a non-stick pan on the stove and heat it, brush with an idea of melted butter, and cook the pancakes, a few at a time, taking
a small ladle of batter and forming pancakes with a diameter of about 8-10 cm.
Cook for about 3 minutes, turn them over and continue cooking for another minute.
Serve accompanying with honey and red fruits.
