3 eggs
150 gr. oat flour
120 gr. 00 flour

Combine 00 flour and oat flour and add the eggs in the mixer bowl.

If you knead by hand, make a fountain with the two flours on the work surface, peel inside the eggs and start working,
little by little, bringing the flour from the sides towards the center of the fountain, until everything is kneaded.

Work this dough until everything is well kneaded, even if it will still be a little crumbled.
Then pass all the dough on the work surface and still work well with your hands, until you get a nice smooth and consistent dough.

Wrap in plastic wrap and let it sit for about 30 minutes, then your fresh oat flour pasta is ready for be used in the best way you want!
